2018 14.0% alc vol. Hand picked from the earliest ripening divisions of the vineyard. Whole Bunch Pressing (40%) combined with Carbonic Maceration (40%) and Whole Bunch Fermentation (20%) has provided lifted aromas and vibrant flavour. Following 12 mnonths in American Oak that was stripped and reconditioned for a bespoke toasting program, the wine has replicated the French Beaujolais Villages style.
2020 14.5% alc vol. Once again the three fermentation techniques were utilized for this vintage. One modification to the 2018 Beaujolais was incorporated to enhance the freshness of the 2020 wine. A portion of the Whole Bunch Ferment was separated from the rest to allow malolactic fermentation to be conducted in the bottle. The byproduct of this action creates carbon dioxide which provides a little spritz to the finished wine.
